Gluten-free Pancake or Waffle Mix

Flour Mix: (keep flour mix in fridge)
  • 1 1/4 cups brown rice flour
  • 2/3 cup potato starch (not flour)
  • 1/3 cup tapioca flour
  • 3/4 corn flour (or another flour with more protein than rice)
  • 1 tsp xanthan gum (or 1 1/2 tsp gaur gum)
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 Tbsp sugar

Instructions:

  • take 1 cup of flour mix
  • add room temperature wet ingredients:
    • 1 cup milk
    • 1 egg (stir a bit before)
    • 2 tsp oil (like canola or another light oil)
  • let stand 5 minutes
